       Her goals are likely attainable, but not via the path she is

       Good suggestions.  My daughter the Vegan will be visiting late
       April/Early May for a long weekend.  Husband and I eat vegan
       with her.  The pierogi recipe looks especially tasty as a switch
       from beans & rice, beans & peanuts, spinach & rice etc etc.

       Yes it's a crash diet. The OP says this person is an occasional
       vegan and her goal is weight loss; not a lifestyle change. I
       said above that diets don't work, especially such an extreme
       diet, and wouldn't be surprised if she caves in at Easter and
       eat the OP's feast.
       But Easter is still weeks away so she has to eat *something* of
       substance in the meantime. What proteins is she eating during
       these weeks or months? I can't imagine being able to function a
       work day by only eating vegetables.

       Somewhat off topic, but yeah, this "diet" plan seems extremely
       ill advised. I have no idea how much weight this person seeks to
       lose, but almost certainly her current plan is not going to
       succeed. Being vegan is not a weight loss diet plan in and of
       itself (Oreos are vegan, for example), and if she is also
       cutting out foods with substance she is most definitely setting
       herself up for failure.

       subject -- sorry ! -- but I initially read the above-bolded, as
       "Orcs [as in Tolkien] are vegan". For sure, nothing good has
       ever been known to come of them...

       How did it go? Did she eat the regular dinner or was she happy

       I am not able to quote ABL’s post - but while it seems to be
       very informative- it’s not fair to take an important dinner like
       a major holiday and rework everything for one person.  No matter
       what the reasons.  Ethical, Religious, Medical or Fad Diet. I
       would make sure she had all major food groups to eat and serve
       the traditional foods made the traditional way.
       That said- how did it go.

       The dinner went beautifully.
       As I said before, she's a wonderful woman and we all love her.
       She was very grateful that we made the ratatouille and even
       asked BeagleBoy for the recipe.
       She did have small amounts of some of the other foods and raved
       about my tres leches cake.

       Isn't the very definition of 'tres leches' three milks?   That's
       not exactly vegan!   But I think it's cute that she loved it.
       Aren't you glad you didn't go completely overboard?   Everything
       worked out perfectly for everyone involved.
