       Cutting losses.

Mr. Pons has lately taken a liking to Trader Joe’s. He comes
home with lots of good things but, today, we became acquainted
with ‘Organic Corn Chip Dippers With a Mexican-style Street Corn
       flavored Seasoning’.
It sounds like fun but the things are spicy enough to burn the
top of our heads off. Mr. Pons is fond of spicy food and these
chips are so hot he can only tolerate a chip or two. We’ve
tried a guacamole dip and it doesn’t quite work.
What can we do with this stuff?
I was thinking we could grind the chips up and mix some with
breading for fried chicken or fold a bit into omelets with
       cheese.
       Does anyone have other suggestions?

I'd slightly crunch them up and use them as taco salad or chili
       topping

Crush a few up, mix with a little melted better and use as a
topping on a pan of mac and cheese. The dairy should cool them
       down a bit.

Yes, corn chips/tortillia chips make a great coating for chicken
or fish. If they are too spicy, add a bit of corn meal and flour
after crushing them. I sometimes make fish tacos that I the fish
coat in spicy dorritos and then air fry. Add some guac, cabbage
       and cilantro in the tacos.
Another idea is to use them in King Ranch Casserole as the final
topping. If you don't have a recipe for this, happy to supply
       one.
You can also make corn casserole and top it with crushed up
chips or make tamale pie and use them as the topping.
And of course using them for Frito Pie would be great! Just use
a chili that is not already too spicy.

Thinking off the top of my head, but along with others
suggestions maybe make the crumble for toppings, breadings, etc.
with some of these chips and mix them with regular tortilla
chips (Dorito's Ranch chips comes to mind) so that the hot and
       spicy isn't so prevalent.
Whatever you decide to do, please keep us posted. Would like to
know how whatever turns out! ;D

If you don't like them, take them back. Trader Joe's is GREAT
       about returns.
