       You know you're not going to eat it...

       Just for discussion....
       You go to a restaurant and decide to order the chicken dish. It
       comes with a side of green beans. You don't like green beans so
       you know you're not going to eat them. They are going to go to
       waste if they appear on your plate.
       Do you just order the chicken and not mention it? Or do you let
       the server know to leave the green beans off?
       It's not that you're expecting a substitution. You'll be
       perfectly happy just to have the chicken dish completely as is,
       minus green beans.
       Is it more polite to ask the server to leave them off the plate,
       or not to bother the server with an additional request knowing
       they will get tossed?

       I always explain to the server that I'm not going to eat
       something and request that the chef doesn't need to put that
       item(s) on my plate, because I hate wasted food.
       That said, if the item ends up on my plate, I'm not going to
       bother saying anything.  Why waste everyone's time when it's too
       late?  I feel better knowing I tried.

       When I was low carb, I'd often ask for no rice or no potatoes.
       Primarily because if there, it was too hard to not just have a
       bite. Most often, the waiter would ask if I wanted a different
       vegetable or side.
       I think asking to leave something off is pretty common request
       so I don't view it as an additional burden on the server or
       kitchen staff. Just part of the job. To me it's no different
       than asking for no onions on a burger or for sauce to be served
       on the side or dressing on the side.

       This is what I do. For one thing, saying, "Oh, I don't want the
       green beans" allows them to offer a substitution, which is good
       for them--no extra cost, really, but they're making a customer
       feel welcome and catered to, which is a positive for them. Even
       if I decline, or knew I would decline.
       And it eliminates later conversations with everybody about
       whether there was something wrong with the green beans, etc.
       I don't feel bad if I forget, but if I know, I ask them not to
       bring it.

       If money is an issue, make sure to ask if the substitution is an
       extra charge. I been out for for breakfast with my BIL and he
       doesn't like homefries/hashbrowns so always says to leave them
       off. At one place the server asked if he would like a small cup
       of oatmeal instead. He said yes and then was surprised to find
       an up-charge for oatmeal on the bill. no mention of that by the
       server when she offered it.

       I would simply tell the server I don't need the side. (Although,
       I'm not a picky eater, so rarely is there something that I won't
       at least try.) More often than not the server will beat me to
       the punch with something like "are fries fine?" which I can
       decline. (Note: I've never declined fries!) I think it only
       becomes rude if I INSIST on a substitution.

       Honestly I suspect that was just a mistake.   I'd have enquired
       about it when settling the bill.   I doubt if she really
       intended to charge you.

       I’d say it probably was the correct charge - from my extensive
       brunching experience (hehe), switching hashbrowns for oatmeal is
       likely to be an upgrade which costs more. She should have
       disclosed that when asking him if he wanted that instead.

       I usually ask the waiter to leave whatever item it is off the
       plate.  Most times they voluntarily offer a substitute item but
       I normally don't ask for one.
