Summer Recipes

I have a recipe for a Chinese chicken. It cooks a whole bird
with minimum heat and produces good material for summer
sandwiches and salads.
BRAISED SOY SAUCE CHICKEN
4 to 5 lb chicken
2 C cold water
1 C soy sauce
1/4 C pale dry sherry
5 slices peeled fresh ginger.
1 tbsp five spice powder
In a heavy pot just large enough to hold the chicken bring
water, soy sauce, wine, ginger and five spice to a boil. Add
the chicken. the liquid should come halfway up the side of the
bird.
Bring back to a boil. Reduce heat to medium and cook covered
for 20 minutes.
Turn the chicken over, replace cover and simmer20 minutes
longer.
Turn off the heat and let the covered pot sit for 2 to 3 hours.
I know this sounds like a recipe for food poisoning but the
results are delicious as a hot meal or very refreshing on a
Caesar salad.

I was going to cook some cheese tortellini yesterday and saw a
suggestion on the package for using them in a pasta salad. So I
did, with black olives, raw cauliflower, and canned artichokes,
with a creamy dressing.

How about a spring meal?
One of my Mom's favourite meals was fresh asparagus with bacon
and cheese sauce on toast. Asparagus is (one of) the first
fresh crops in the spring so I think that was why. :)

Those recipes sound very good. I never would have thought of
serving asparagus on toast but why not?
An easy but slightly elegant salad goes well with the chicken
recipe I presented above
GLASS NOODLE SALAD
1 pack cellophane noodles
Grated carrots
Grated celery
Soy sauce
Sesame oil
Place noodles in a glass bowl.
In the microwave, boil enough water to cover the noodles.
Pour boiling water over noodles and let sit for five minutes.
Cool.
Toss withcarrots, celery, soy and sesame oil.

Cheese Sauce:
1 tbsp butter
1 tbsp flour
1/8 tsp pepper
3/4 cup milk
3/4 cup shredded cheese - I like to use old cheddar
Melt the butter in a small sauce pan. Stir in the flour. Add
the pepper. Slowly add the milk, all in one shot, while
stirring. Cook over medium heat until the sauce is bubbly and
is thickened. (If you just want a white sauce, you'd stop here
but also add about 1/2 tsp of salt with the pepper). Turn down
to medium low and stir in the shredded cheese until melted.
Serve on various vegetables - broccoli, cauliflower, asparagus

Have you ever used other veggies? I'm thinking bok choy would
be good.
My DD would love this dish. I try it this weekend.

Bok choy would probably be very good. The only reason I
suggested grated carrots and celery is that they are close to
the shape of the noodles and that can be a big deal in some
forms of Chinese cuisine.
Certainly, bell peppers would work. You just don’t want to use
vegetables that require cooking because the idea is to make a
summer salad that looks appealing to tempt the appetite on a day
of ghastly heat.

I've been making salads with barley! Cool it after cooking and
add oil + lemon, salt, pepper and then added Tomatoes, feta,
chopped spinach.
Endless possibilities.

I've been making lots of chicken salad this month. I stick to a
nice basic version with celery and mayo and sweet pickles, and I
add some poached chicken breasts I've chopped up. It makes a
good sandwich or a plate meal with fruit and rolls or biscuits
on the side.
