I had some little filet steaks in the freezer that i forgot
about. So I had one of those along with spiced cheesy au gratin
potatoes, and garlicky bean salad. Also deviled eggs.

Roast beef (bought one and cut it in half, froze the other part
for later), with roast potatoes and parsnips.
Did a lemon pudding cake for dessert, which was yummy.

I worked Easter Sunday and had hoped that dh would put the ham
in the oven but he's never cooked a ham before and didn't want
to. Instead I pulled out some bacon and made "breakfast for
dinner." Being off on Monday, I made vegetable soup, ham baked
with pineapple rings and cloves, steamed cauliflower, and mashed
potatoes. And now we have leftovers. Yay!

Roast leg of lamb, roast potatoes, roast parsnips; braised red
cabbage, green beans. Gravy. Followed by baked apples stuffed
with sultanas and dried apricots, and condensed milk.
We invited my bro-in-law (he lives in London) and our two
children (who live ten miles from us), and there was a frantic
scramble to get the laptop updated so that we could do a
FaceTime call with more than one screen. But it went well! And
the children were very envious of our roast dinner.

Sure, I just googled - it’s a recipe my mom used to make, but I
didn’t have it.
Good if you have eggs but not much flour.
