Easter Dinner

I understand it's not the same with no big family gatherings.
What's everyone making for dinner today? I am making lasagna and
it just got placed in the oven.

Baked ham, because I had one in the freezer! Deviled eggs,
potato salad, mac and cheese, and something green!

We're doing some lovely steaks, and DH will also grill pineapple
slices. I'm planning to make polenta in the instant pot.
Dessert will be sliced strawberries that DD picked up when she
did our Costco run, as well as the Easter candies that she
bought earlier this month on her Safeway run. And it will be at
our normal dinner time, rather than mid-afternoon. DD works as
a loader for UPS, so she is due at work between 2 and 3 a.m. and
sleeps during the day.
She got up this morning for hard-boiled eggs and coffee cake and
to join us for the recorded church service. I really appreciate
our pastor being in his robes to do his sermon and the liturgy
in the empty church. That plus various recorded music made for
a lovely service, even though I really miss worshipping with
others.

Yesterday's leftovers! Chicken and vegetables in butter chicken
sauce over rice.
I appreciated our Pastor and his wife decorating the platform
the way we usually do for Easter, for the live stream service,
since they and their daughter are the only ones in the church.
Well, them, and all the dolls and stuffies from the nursery! The
first day they live streamed, the wife and daughter scattered
all the dolls and stuffies around the sanctuary so he would have
an audience. He showed and told us at the end of the service,
and I admire his ability to speak and make no indication that
anything was different! But it probably gives him good faces to
focus on, as if you watch the videos you would never know there
were no people in the room. He glances around as if he were
talking to the regular congregation. Tigger pays attention real
well...

Baked pasta with meat sauce topped with mozzarella. Fresh baked
dinner rolls (made from frozen dough balls). The rolls were set
out frozen this morning around 9:30 and were huge when we put
them in the oven. I think I could have skipped the pasta and
just had rolls. They sere SO good.

I asked my dd and dh what they wanted for Easter lunch. We had
pot roast, a simple salad, a baked potato, cornbread and
brownies with ice cream on top. I polished the silver and pulled
out dh's grandmother's fine china and crystal. and dh picked up
a huge amount of flowers from the grocery store last Friday. He
put on a suit while I donned a hat and dress. Dd dressed up
while the baby wore a smocked batiste little dress. We took
pictures and made the most of the holiday.

I had a beef filet steak, cheesy scalloped potatoes, and bean
salad.

We had ham, pear sauce, Ina Garten’s gruyere and fennel
scalloped potatoes, roasted brussel sprouts and spoon bread.
Lemon bars for dessert.
Husband went fishing this morning and I caught up with a friend
over zoom. After we ate we took a plate to a friend who lives
alone and visited her on the back patio, keeping our distance.
She’s 88 and we haven’t seen her in a month. I’m so glad we went
- this is clearly taking a toll and I believe we need to find
safe ways to mitigate that.
