The airlines don’t generally give you cash. I have only ever
       gotten travel vouchers.

I guess you can tell it's never happened to me. Thanks for the
       information.

I'd say a 50/50 split. Especially if it's paid in vouchers that
can be used at the airport so the kids can get something to eat
       while they're waiting.
If the vouchers are only good for future travels, I'd say put
them in the "bank" for the next family trip.

I think that is an interesting scenario and it would probably a
       "it depends".
With work, if I get bumped and get a travel voucher from the
airline, I get to keep the payout. The company does not get it.
So my first thought is they get it.
I also think that if it were my own kids, and they ended up
getting a travel voucher because of being bumped then I'd
probably let them keep it too for future travel. I had already
planned to spend on their behalf and it was their "luck" that
they ended up with a better gift than planned.
But then I could also see my kids turning around and giving me
the travel vouchers, especially if they weren't really put out
       too much by the delay.

Actually, they were offering gift cards--American Express,
Macy's, Delta, you got to choose. So if that was the offer
again, it would be as good as cash.
I'll throw some other things in the mix. We have to stay in a
hotel, and I could have had to rent a car (I didn't, but since
this is all hypothetical anyway, what if?)
Would it be OK to insist that the gift card be used to whittle
down other expenses for this trip?
And if so, there would probably be a little money left over,
and then what would we do with that?

Ooh, that's an interesting idea--that they use the money to
reimburse me for the tickets, and they get whatever's left. But
then that's me getting the money instead of them.
The airline was offering gift cards, and it's logistically
difficult to use them to pay a credit card (and I have not paid
       off that bill just yet).

I'm not sure I would insist but I would ask if they would be
open to using the gift cards for paying trip expenses.
       editing to add
My opinion would be different if I were traveling with my kids
and we were all bumped and got vouchers or gift cards. Then I'd
very much be a "woohoo... $800 amex card to spend on the trip"
and I'm sure they'd completely go along with that.
I think I feel differently because if I were there, then I would
be the host and the recipient of the refund. But if not there,
I'm asking them to hand over something given to them.

This is sort of interesting--the "family resource" idea. That
might seem like the most fair. But then it's really me getting
the money, since I'd pay for any family trip, regardless of
whether I used this windfall for bills, since money is fungible.
It would be a gift card, so it would SEEM less fungible.
And I'd forgotten about the meals at the airport. If I decided*
to split it 50/50, I'd probably say, "use the gift card for any
travel expenses, and THEN we'll split it." Or, I'd say "spit it
50/50, and use money from my half for meals at the airport."
*this is all hypothetical, of course

If I were the adult child, I would see it as a family bonus and
offer it up toward trip expenses. Maybe you could do something
in your destination that seemed too expensive otherwise, or have
a great family dinner or something. Use it to make a memory!
That said, I'm sure my mom would try to stop me from spending it
on her, because that's how she rolls. :)

If they were gift cards, I would be sure to tell the kids, "If
you can use it at the airport to buy a meal or a book while you
wait, go ahead." Hopefully they are not going to be spending the
       entire $800 there!
As the kid, I would then give the rest to my mom--again, because
she paid for the tickets. And I have the feeling that with MY
mom, anyway, a lot of the money would come back to me in some
       form eventually.
But, what is tricky is if (hypothetical new situation) the
people involved disagree. Like if the kids automatically
thought, "Whoo-hoo, $800 for me!" and then Mom was like, "And
where's my money?" It is probably best to be clear beforehand.
Like, "If there is an issue and they offer you gift cards to
give up your seats, feel free to do that, just let me know your
new arrival time. Spend some of the gift card at the airport on
meals or books, if you need to, and we'll put the rest towards
       the next family travel plan."
This has never happened to me. I remember occasionally hearing a
call for people willing to give up their seats, but that was
never me. I hate traveling and I always want to just get where
       I'm going.

I think the polite thing would be for the "kids" to offer you
the voucher/gift card/cash, since you paid for the flight, but
it would also be polite for you, as their mother, to refuse and
let them keep it, or to split it, or use for a family experience
(that's really my favorite solution because it seems very fair
and the bonus is that you get to bond as a family whether you
went out to a really nice dinner, took another trip, went
shopping for something the family can enjoy together, etc.). I
know if it was me and my mom, I'd probably offer it to her, and
she would probably decline. If it were in the form of a gift
card, I might try buying a gift for her from whatever store or
doing something else extra nice for her.
If you both felt entitled to the voucher or gift card, I think
I'd have to say that the one who gave up their seat is the most
entitled to the reward, assuming you paid for their trip because
you wanted them to go, not because they begged you to pay for
them. It's also assuming that they didn't miss the purpose of
the trip by taking a later flight, ie: you flew them in for a
cousin's wedding, and they gave up their seats to get a reward,
but it caused them to miss the wedding.
This is really interesting, I love the scenarios that really
       make me think :)
