I think it was fine the way you handled it. No need to go to
management about something like that, tempest in a teapot and
all that.
(I’ve tried their butternut squash soup and I liked it, so
there!)

I think you handled it just fine. And, FWIW, Trader Joe's low
sodium tomato soup is wonderful!!!

Sigh. It's difficult when people are so determined to help you,
even when you don't want to.
I was in an electronic store many years ago, purchasing a DVD
player. The person behind me in line at the cashier saw it, and
felt compelled to tell me I could get that model at electronic
store B for $50 less. I nodded. He persisted.
Fortunately, I was served and bought the device scant seconds
before I felt compelled to tell him, "The manager of THIS store
was a pallbearer at my father's funeral. That's why I'm buying
it here."

I think you were fine. I probably wouldn't have called over an
employee. But I might have shown my irritation if she didn't
quit. I might have said something like "duly noted but I'll
make my own decision, thanks!"
OP, please tell us, once you try the soup, did you like it? I'm
curious now!

I have done the opposite but said something positive about a
product...but then I move along because I don't want people to
feel awkward if they decide they don't want the product.
You could have asked: What did you think was awful about it?
or "I heard you."
or "I heard you..I think I am going to try it anyway."

How strange. Why did she dart back when a new person approached
the soup aisle? Is she policing customer's soup choices?
I probably wouldn't know what to say after the first time and
will either ignore her or passive aggressively put 20 cans in my
cart.

Reminds me of a time I was at the store and the person behind me
in line was really upset that I wasn't going to buy 2 of
something that was BOGO (Buy One, Get One Free). I didn't need
or want the second one, I also didn't have a place to store it.
I finally had to just ignore her until I left the store.

Maybe they were hoping you would give it to them.
I might have said, "I don't have room for an extra, but if you
want it, go get it."

If she wanted me to give her some groceries, there are better
ways to go about it than annoying the crap out of me. She had a
full cart, so I doubt she was going to starve to death for the
lack of one grocery item.
