Using a slice of solid, slightly stale, banana bread to make to
make French toast is a little slice of heaven.

Banana bread reminds me of zucchini bread. I don't know why I
connect the two together, but both are a thing in the US.

The spices and quantities listed on the Libby's can are
inadequate for me. For one, it doesn't mention nutmeg, which
you use in very small quantities, like 1/4 of a teaspoon. That
doesn't sound like much but it does make a difference. The
other quantities I doubled.
I screwed up on pumpkin pie on my first attempt by not using the
right milk and not following the temperature instructions on the
can. That change is there for a reason.
And yes many times to the frozen pie crusts. Those are great
and convenient.
Now, I personally hate nutmeg, so I'm ok with Libby's omitting
it. But yes, increase everything else.

How on earth do you keep a slice of banana bread around long
enough for it to get even slightly stale. ??? Our family just
sort of inhales it the minute it's cool enough to touch! :-\
But it does sound delicious!

Okay, people, all this pumpkin pie talk is making me hungry for
it. However, you are missing a key element - coconut! My
mother was famous for her pumpkin pie with coconut. When they
first hear of it, people are skeptical, but they become fans
after they try it.

I make at least 4 pumpkin pies every year, but I make even more
loaves of pumpkin bread. My recipe is in the Joy of cooking,
but they are all pretty similar. Pumpkin bread is similar to
banana bread in looks, but is every bit as good imo.

Thanks again everyone! Actually pumpkin bread sounds delicious
as well.... (and I've already got the banana bread tin).
Off to google some recipes for that!
Glad Banana Bread is international :)

I have a sugar-free recipe for it.

I could be worse. The first time *I* made pumpkin pie, I used a
frozen pie crust and FORGOT to take the paper off the crust
before baking! Disgusting is too nice a word for what came out.
Inedible comes to mind.

I'm the same way. Too many recipes provided by these companies
are bland.
Many "traditional" company recipes are low on the spices. Not
only have tastes changed over the years (had to laugh at a
recipe for "spicy" sauce that got its spice from "a few grains
of pepper"), but spices were once more of a luxury than they are
now, so used sparingly.
If the recipe is old, you may have to increase spices to suit
modern tastes.
