       Pumpkin pie - oh my!!

       So... during the week I was roasting some pumpkin to put in
       salad and DH had the fabulous idea of making a pumpkin pie!!
       I have never made or tried pumpkin pie. We’re Australian and
       it’s just not a thing here. But it sounds so good.
       So!  I’ve currently got a test pumpkin pie in the oven. It’s
       Father’s Day here tomorrow so we can have a trial run today and
       actual version 2.0 tomorrow. Thank goodness because this has
       turned into a bit of a comedy of errors.
       1. I don’t have a pie dish. And I wasn’t going to make pastry.
       So pie is now using puff pastry and in a banana bread tin.
       2. Recipe called for evaporated milk but I bought condensed milk
       by accident. So it is going to be sweet!
       3. Because of point 2 I deliberately omitted the maple syrup
       (only 2 tablespoons) and 100 per cent did not leave it sitting
       on the bench unopened.
       4. No spices.
       Apologies to all I have offended! Please share your favourite
       public domain pumpkin pie recipe!! ( not after family recipients
       here!)

       I have no idea what your 'pie' is going to taste like, but I
       think it's a safe bet that it won't taste like what most of us
       think of as pumpkin pie.   :D
       If they sell Libby's pumpkin in a can there, there is a
       wonderful standard recipe on the label that produces
       consistently good pumpkin pie.  And I use frozen deep dish pie
       shells.  There is usually some filling mix left over and I just
       put that in a Pyrex custard cup (the larger size) and bake it
       along with the pies.
       P.S.  I often use half and half in place of the evaporated milk.

       The spices and quantities listed on the Libby's can are
       inadequate for me.  For one, it doesn't mention nutmeg, which
       you use in very small quantities, like 1/4 of a teaspoon.  That
       doesn't sound like much but it does make a difference.  The
       other quantities I doubled.
       I screwed up on pumpkin pie on my first attempt by not using the
       right milk and not following the temperature instructions on the
       can.  That change is there for a reason.
       And yes many times to the frozen pie crusts.  Those are great
       and convenient.

       I don't double the spice quantities, but I have been known to
       use heaping teaspoonfuls rather than the typical flat scraped
       teaspoonfuls.   ;)

       I'm the same way.  Too many recipes provided by these companies
       are bland.

       I've never made pumpkin pie so don't have a recipe, but maybe
       Google easy pumpkin pie or check out some YouTube videos? Once
       you get the basics down, then experiment to your taste.

       I've not made it either, buy my understanding is there are
       certain types of pumpkins that are meant for pie, others not so
       much, so your result may not be as expected there either. If I
       were to make a pie, I'd buy the pie filling because I am just
       not much of a cook or baker! And Yes to adding a bit more
       pumpkin pie spice.

       I’m sure your pumpkin dish will be delicious regardless of what
       you do.
       Yes, there are different types of pumpkin.  The ones we carve
       for Halloween are good for pumpkin seeds but not so good for
       pie.  Pie pumpkins were called cheese pumpkins in my youth.
       These have thicker meat.  They’re also squat in shape and tend
       to have white rather than orange skin.
       By the way, let’s hear more about pumpkin salad.  That sounds
       really nice.
       Also, most label recipes are bland.  After all, aren’t they
       intended to be the base lines of treasured family recipes? :)

       I use the recipe on the Libby’s can, subtract one tablespoon of
       evaporated milk and add two tablespoons of molasses. The
       molasses gives the pie a little “deeper” taste and a little
       browner color.
