As long as they have fresh soup available, even if you have to
reach for the second back tureens, there's nothing to do since
they don't seem to mind. It's just one of those annoyances of
life. The cafeteria may even be glad all the "good stuff" are
taken since there's less waste to throw away at the end of the
day.

Maybe the second tureen is the answer to all of the good stuff
being skimmed out of the first.

I can't imagine that the price difference is going to be that
much. It might even be that the all-broth would weigh more than
the soup with all the stuff.

I think it's inconsiderate, at least, to deliberately snag the
good parts of a shared resource, particularly when you have to
go out of your way to do it. In other words, I wouldn't care TOO
much about someone casually trying to tip a bit broth out while
trying to convey the ladle to the bowl; but pouring the broth
out repeatedly is taking more than your share.

I wasn't suggesting they "report it" as in seek discipline for
those taking more than their share of the contents.
Rather, maybe the chef needs to tweak the recipe to offer more
of what people obviously want. Or offer a stew instead of a
soup, or something.
If the chef were serving, say, a sandwich -- and everyone kept
opening up the sandwich, peeling off the lettuce and tomato and
throwing them away -- the chef would probably want to know so
that she/he could redesign the sandwich. If some people are
getting shorted on the soup contents because patrons rebalance
the ratio, perhaps the soup needs rethinking.

If the soup is like the ones they serve at my workplace, it
comes pre-mixed (think cans or frozen) and they just heat it up.
There's nothing to tweak.

I don't think so because it's not always the same. Sometimes the
broth is thicker, sometimes there are extra veggies, and
sometimes! there's a bit too much salt.
The soup I particularly enjoy is advertised (on their menu) as
Beef, Barley, Mushroom soup with vegetables in a creamy broth.
The last time I dug through the remains I didn't get any
mushrooms at all.
It's good to know that I'm not rude by going to the back tureen
to simply scoop and pour. It is a bit cumbersome, reaching back,
and I do need to be carful about spillage. The cafeteria is open
for two hours. I usually get there within 15-20 minutes after
opening but at 45 minutes or more after opening? That's when the
front tureen is scarce of good stuff. I don't know when the
staff takes away the front tureen and moves the back one to the
front.
Funny to those of you that mentioned enjoying the broth rather
than the good stuff . . . I'm slowly changing my diet, and am
enjoying the broth more. Used to be that I wouldn't eat anything
but creamy soups, and brothy soups with no good stuff belonged
in a mug for sipping rather than spooning when I was sick.
Thanks for your responses, keep them coming! ;D

Jpcher, it works out REALLY well at home. My DH is a chunky
scooper and I like the extra broth. It's a perfect match.

None of it is rude. Or inconsiderate.
The cafeteria has made a decision to have the soup be self
serve. If that is not working for them, they will change it and
make it so that you have to order it from a server. Once you
make something self serve, you tacitly agree that the customer
will be taking the best available at the time they serve
themselves. So yeah, if it's mac & cheese, they'll go for the
crunchy topping. If it's soup, they'll glean the solids. Etc. As
a customer, you have to decide if you're ok with what's
available at the time you arrive. If you're not, then you will
choose something else or choose to go elsewhere. That's how it
works.
Additionally, the cafeteria made the decision to have two
tureens available. So how can it be rude for you to choose to
serve yourself from either one? If they didn't want customers
partaking from the second tureen, they would hold it back till
the first was depleted.
It's sort of like when you go to the bakery and they have
several of each kind of pastry on display. You can tell the
counter server which one to give you. Or if you go to the
butcher counter at the grocery store, you can say, "give me that
steak there." Or at the seafood counter, you can pick which fish
on display that you want.
Well, this is similar, except you are serving yourself instead
of being served, but in the end, you are picking what you
consider to be the best choice available to you. Nothing rude or
inconsiderate about that.
