Cajun beef jerky is one of those snacks that everyone enjoys.

jerky. There is nothing tastier than good Cajun beef jerky. If

This Cajun smoked turkey recipe is a super easy recipe with the
Cajun Bait seasoning. If you want to know how to smoke a turkey
that is so delicious then this is the recipe for you. This
smoked turkey breast turned out fantastic and can be smoked on a
Bradley smoker or a zgrill pellet grill. This spicy turkey was
made with Cajun Bait seasoning and I used the Smartro

Stuffed pork medallions are so easy to make on the Weber Kettle
or any smoker / grill. Just use a pork loin and cut into 1.5 to
2 inch slices, cut a pocket in the slices and fill with your
favorite cheese and broccoli. Apply a nice coat of your favorite
rube, I used Chupapcabra Brisket Magic as my rub. On your Weber
kettle just set up your coals for in-direct heat and use a
couple pieces of Cherry wood for flavor and color.
Cook at 350 degrees for 30 to 40 minutes until an internal
temperature of 145 degrees is reached. Remove from Weber kettle
and rest for approximately 10 minutes, slice and serve up some
of the greatest pork loin you've ever had. If you've ever wanted
to know how to make pork tender loin on the Weber kettle, then
this is the recipe you've been looking for.

It's almost Valentines day and this surf n turf recipe is
perfect for your Valentines day recipe. Just season Rlbeye
steaks with your choice of Chupacabra rub. Then split your
lobster tail down the middle of the shell all the way to the fin
of the lobster tail. Slide your fingers between the meat and the
shell on the sides and dribble about one tablespoon of melted
butter with minced garlic per side. Place both on a tray and
slide in your 225 degree preheated Bradley smoker.
Smoke with Apple bisquettes until the lobster reaches 140 to
145 degrees internal temperature. Smoke the steaks until an
internal temperature of 125 and remove and place the steaks on
hot grill to reverse sear. Allow steak and lobster to rest for
approximately 10 minutes and serve with melted butter with
minced garlic as a lobster dip. This recipe is sure to catch the
attention of your spouse especially on Valentines day.

Today we are going to start the curing process for homemade
bacon. This easy homemade bacon recipe is super simple. We are
using our Bradley smoker with apple bisquettes to smoke the
bacon and in this part 1 we'll be curing bacon with Morton's
Tender Quick and brown sugar.
If you want to know how to make bacon at home then follow along.
This home cured bacon recipe is one of the easiest and best
tasting bacon recipes you'l find. You can even spice this diy
bacon recipe up by adding Jalapenos, onions, or any other
flavors that you like during the curing process.
Just use 1 tbsp of Morton's Tender quick per pound of uncured
pork belly and brown sugar. Place pork belly in a 2 gallon
ziplock bag and seal. place in refrigerator, turning over every
day, for at least 5 days or up to 7 days until meat becomes
firm. Remove and rinse off all spices and Tender Quick from
outside of cured pork belly.
Fry up a small piece and test for saltiness. if to salty for
your tast soak pork belly in cold water for 15 minutes and
replace water with fresh cold water. After a total of 30 minutes
fry another small peice and taste test for saltiness. Continue
with this process until you have your desired salt level taste.
Apply a good coat of black pepper and smoke on smoker using
hickory or apple wood until an internal temperature of 150
degrees is reached. Remove from smoker and allow to cool to room
temperature.
Wrap in plastic wrap and refrigerate for at least 4 hours, over
night is preferred. remove from refrigerator and slice to
desired thickness and enjoy. We normally vacuum seal in 1 lb
packages and freeze until needed.
