They use it for model training (and occasionally humans will go through things to see if there's any modifications they can make to the platform to resolve issues you may have had, in the future). And, as I said, model training can take weeks or months. LLMs aren't giant databases of everything they're fed, they're boiled down hashes of everything they've been trained on, and the most common words, phrases etc are brought to the top.
